This dish is the “Caesar Berkshire Guinea fowl. This is our teams invention of what a modern day Caesars salad would be, with the thought of a summers day in mind we in-case Berkshire Guinea fowl in a chicken and bacon mousse. Finishing the plate with a parmesan crumble and Ceasar dressing.
