Assistant Sommelier £30 to £35kpa
Experience preferable - 2 years experience as Sommelier in fine dining restaurant
Reporting to: Head Sommelier
Working closely with: Restaurant Team
Job purpose: To assist in the provision of top-class beverage service to guests at L’Ortolan
Key responsibilities & duties:
• Assist in the preparation and checking of all areas, products and equipment required for drinks
• Assist in the upkeep of beverage lists as instructed by Head Sommelier,
• Assist in the receiving of deliveries and storage of wine in the wine cellar, reporting
shortages/changes etc
• Keep wine service and store areas clean and tidy
• Assist in cleaning and preparation of glassware prior to, during and after service
• Service or beverage and wine as directed by Head Sommelier
• Maintain high person appearance and hygiene standards. Be customer orientated,
welcoming and friendly; maintain a professional and respectful attitude and behaviour to
guest’s colleagues and management
• Undertake self-development by learning about menu ingredients, food preparations,
special dietary requirements, and general industry knowledge
• Take part in and complete all training outlined by management
• Conduct oneself at all times in accordance with L’Ortolan health and food safety policies
Senior Waiter / Waitress £24 to £26kpa
- On a day to day basis plan, organise and direct the work of the Restaurant Team
- Lead by setting a good example
- Maintain staff efficiency and morale in the restaurant at the highest level
- Resolve customer complaints about food quality or service
- Assist restaurant service to ensure a smooth and professional operation of the restaurant
- Assist the Restaurant Manager with telephone answering, reservations handling, welcoming guests, taking orders, billing, VIP guest management
- Learn and be fluent in menu ingredients, food preparations and special dietary requirements
- Maintain high personal appearance and hygiene standards.

Job Objective: To help maintain high levels of service and assist with the smooth running of the pastry kitchen.
Reporting To: Head Pastry Chef
- As a Commis pastry Chef you are expected to help run the pastry section in a responsible manner
- Assist the pastry Chef in the day to day running of the section
- Ensure that the day’s tasks as set by the pastry Chef are carried out efficiently and effectively while maintaining the standards of the kitchen
- Ensure food preparation waste is kept to a minimum
- Assist the pastry Chef with ideas for new dishes that reflect L’Ortolan’s standards and customer expectations
- Alongside the pastry Chef ascertain the next day’s business and order foodstuffs accordingly
- Demonstrate a working knowledge of the financial targets outlined within the kitchen budget.
